I did mow the lawn yesterday about noon and was seriously questioning my chili choices, but it was already cooking away. And I spent the rest of the day inside watching football with the thermostat set at 70. Felt like chili weather in my house.

Espresso rub with cinnamon, cocoa powder, and a little ghost pepper salt. Caramelized onions and mushrooms cooked in bourbon, with mashed potatoes and vegetables.

Paired with Devils River Coffee Bourbon, which was fantastic with the steak.

Capped off with a 2017 and 2018 Bourbon County Stouts.

LOVE Ghost Pepper salt. It's so efficient. Season your food as normal, only now it's got that heat without other flavors [vinegar, for example] to interfere.

It's PERFECT for mac and cheese, fancy homemade or cheapo Kraft dinner. All that creamy cheesy goodness, now with a little Ghost Pepper salt, it has that kick without changing the flavor of the mac and cheese itself.

Nice, a lot of great choices there. I bought a 3 pack from Sonoran Spice Co a few years ago with jalapeņo, habanero, and ghost pepper salts, and it doesn't take much ghost pepper salt to give it a good kick (plus a bit of coughing while it grills).

Also forgot the Crown maple syrup aged in bourbon barrels for the carmelization, picked up at Costco.

I also like this a good bit, plenty of pepper kick, I mean a lot of different peppers all with a kick, along with some fennel and cumin, . . . so it has a chili or gumbo flavor profile.

Turned the leftovers into breakfast. I don't usually put maple syrup on things, but just a little bit of that bourbon barrel maple syrup is amazing.

A buddy last night was also talking about making honey or maple syrup sugar, something like this... and then being able to use it in rubs or what not. :-)
