I do a buffalo meat with either the standard chicken or somethings, like tonight, turkey burgers. I grill the turkey burger on the grill.

I make my salad with Romaine hearts, cheese, cherry tomatoes, pickled beets, white onion, stuffed garlic olives, pepperoncinis and Caesar Dressing. I cut up the turkey burger once cooked and toss with a Buffalo sauce. Put on the salad and top with cracked black pepper.

Everything but pickled beets. Don't dislike them, but I gotta eat them by themselves. Their brine just doesn't jibe with other things.

Going to make a simple egg fried rice tonight. I tend to prefer a veggie fried rice with broccoli, cauliflower, squash, zucchini, carrots, bean sprouts, and any other yummy veggies I might have laying around. But the wife asked for something not so veggie tonight.

coconut oil
cold rice
grilled and fresh diced white onions
peas
garlic
soy sauce
fried eggs(we prefer a little white and yellow egg showing)

I will not put in sesame oil. Takes over the flavor too much. Sriracha and Chili garlic sauce upon request.

I was inspired by Buzz' chicken and rice enchiladas from a week or so ago

1 package Vigo yellow rice with saffron
4 chicken breasts diced
4 medium jalapenos diced
4 cheese Mexican blend
1 medium onion
2 tablespoons garlic
Tablespoon chili powder
Velveeta white queso cheese

Cook the rice

Cook up the chicken, onion, garlic, chili powder and jalapenos together, definitely want the japs cooked to soften the heat... I like heat, not HOT

Mix everything together when done and add 4 cheese blend

Wrap in flour torillas

Cover all with large slices of white queso, cover with foil

Bake tightly packed together at 350 for 30 minutes

Cant wait, gonna be an orgasm on a plate

Pretty sure I said this before but I love chicken fried rice, anyone have luck with cast iron and electric stove? Mine never comes out like I want.
