Generally speaking, it's very lean, so you'll need some added fat. And medium rare at the most - it gets tougher and gamier the more it's cooked.
I have no idea what the cut is. It was in a bag and I asked him to put it in my freezer.

Guess finding that out would be a start though.

Pheasant seems like it would be pretty good to eat. But if I have to fly out to mid Kansas it, it wouldn't be very cost effective. My kid had wild boar someone hunted up near Tallahassee while in college. She said it was delicious.

We have some wild pigs around here in the middle of the night. I should set a few traps.

:-) Ha! It's not really a gluten problem but a wheat problem. I can have oats and sometimes rye, both of which have gluten.

I had sorghum syrup here awhile back.

Unlike these pussy Midwestern boys, I like the taste of venison when it's cook right. Let us know what the cut is when you get a chance.

I want to buy half a lamb at some point. I really dig lamb and it's so expensive in the store and usually shitty quality. Or maybe even buy a quarter of beef.

My fault, I thought it was gluten.

If you come out here and leave with 200 lb of grain sorghum that you can grind to flour would help sweeten the pot, no?

I read that Paul McCartney and his wife Linda became vegetarian. They were eating lamb chops one night by the window on their farm and saw :-) grazing. That jolted them into realizing what was on their plate. So they never ate another animal ever again.

His new wife doesn't eat meat in front of him.
