My son and his family have been here for the past two weeks. They left today, so Tuesday I made a special dinner for us all. Appetizers were, sautéed lionsmane, escargot and foie gras with caramelized figs. The main course was rabbit cacciatore and pearl couscous.

Tonight its tuna casserole for me... mushroom soup, fresh mushroom, spaghetti noodles, celery, garlic, onion, peas and cheddar cheese

Its been unseasonably cold and rainy here so did a pozole rojo

Smoked a pork butt last weekend and used the leftovers along with some country style ribs as the base

Full stop hominy out of a can tastes like slimy aluminum so I exercised my KC BBQ DNA and smoked it to dry it out and impart that smokiness

The smoked hominy, along with the smoked pork butt, and the country style ribs as the base was money in the bank

Garnished with radish, avocado, shredded cabbage and lime

I have to dial it down for my wife so added some habanero hot sauce in the bowl to mine

Take a sheet of foil make a bowl add hamburger or hamburger patty mushrooms carrots onions peppers cover with brown gravy mix add milk wrap up and make one for each person. Bake one hour. Unwrap and eat.

Variation use sausage and country gravy mix.
