I have a guy that prepares his own premade Italian Steaks, the seasoning he uses is just out of this world, it’s like some sort of magic dust. I just fried them up in olive oil and went to town. Usually I eat them plain with a knife and fork but I went all out an ate them on Italian bread with sauce and mozzarella cheese. Sooooo good. [Reply]

The son and I came home from a wonderful 66-degree Xmas Eve ride and were also treated to lasagna and bread sticks. I usually don't do that many carbs so it was nothing short of amazing.
The wife also have the Tennessee Pride casserole resting in the fridge for Xmas day breakfast. And last, we have the steak floating for Xmas day's traditional Hawaiian steak dinner.
I'm also going to make a poor man's brisket (chuck roast) some time soon. It's amazing IMO. The process is much quicker and the flavor is shockingly good. And nailing man's brisket is a lot simpler and reliable that the real deal. [Reply]
Have a case of diced tomatoes so I have to do something with them cans. Still 3 more to go.
Made a red sauce today that took about 3hrs start to finish. 3 cans of just your normal diced tomatoes. None of them San Marzano high class tomatoes here. We gutter trash up in here. Grated in some garlic, added onion powder to taste, Italian blend seasonings, salt pepper, some honey and sugar, olive oil and some red pepper flakes. All by feel and eye sight motherfuckers. If you can't at least measure of a tsp in your hand. Go away. Simmered those tomatoes down till I was good with the consistency. Boiled some water with a couple dashes of salt, put in a couple bundles of angel hair pasta. Then transferred the pasta over to a skillet with some sauce, pasta water and meatballs and a couple spoon flips later the grub was put into a bowl then into my belly.
