I have never met one that doesn't bark constantly when outside.

Kept it simple today, grilled a 6 pack of bone-in thick cut pork chops and slathered them with Sweet Baby Rays hickory and brown sugar

Also threw on a monstrous 2 and a half pound pound top sirloin just for giggles

Tonights dinner and several work lunches are now covered... I'll be throwing some tater salad and sliced garden tomatoes with it

Sounds good. I've did some seafood jambalaya this morning and meatloaf in now for meals next week.

Got this from a chef acquaintance and have made a few tweaks (he scaled it down from huge batches for the restaurant, and it wasn't quite right).


Meatloaf
1.5 lbs of ground beef
2 eggs beaten
¾ cups panko
1/3 cup ketchup
1 tsp Italian style seasoning
1 tsp dried oregano or fresh (fresh is typically 3:1)
1 tsp dried basil or fresh (fresh is typically 3:1)
1 tsp garlic salt
1/2 tsp white pepper
1 ½ cup shredded parmesan

Method: Preheat oven to 350. Combine all ingredients , mix well. In a well oiled pan, form loaf, wrap with aluminum foil, and place in oven and cook for 30 minutes with cover and cook for another 40 without.

Fire roasted some Hatch chiles in some stifling humidity today. Wife made some Hatch chile hummus with one and I vac sealed the rest for winter. This wave seems hotter than years past, imo.

The jambalaya is tasty. I had a bag of frozen seafood mix that I used instead of just shrimp - shrimp, calamari, mussels, and scallops. Made it with homegrown bell peppers, too.l, and a couple different smoked sausages.

Got a tremendous deal on wild caught Alaskan cod at Aldi, huge bag with 8 pieces for $10... every piece is either the whole fillet of a smaller fish, or squareish chunks up to 2 inches thick from a larger fish

So its gonna get a beautiful beer batter job, topped frequently with Sriracha

Plus a rice pilaf with fresh carrot, peas, onion, garlic, butter, and chicken stock not water on that rice... will probably sprinkle on some parmesan romano mix as well

I'm on vacation, so its time to live well

Next up for the big weekend is a seafood loaded jambalaya, inspired by FMB... its gonna get some real TLC
