As I've found with venison roasts, you can sous vide these cuts for ~12 hours and tenderize the them to a much much better degree.

The legs pulled back up on me when I put it on and I didn't have gloves to reset them but I removed the spine and broke it so while its not laying completely flat its technically spatchcocked

Also cooked it at 375F which probably blurs the line between smoked and grilled but I am using wood

Comfort food for an uncomfortable day.

Got snipped this afternoon and I'm in the early stages of a nice, rotten daycare cold my 5 month old gave me. But I still made soup and I'm gonna have some drinks so it wasn't all bad afterall!
