Made up 2 stockpots of stock from my freezer scraps. It will yield a couple of cups of goodness.

Thinking of making my "Baron's Saloon Black Been Chili (no chili powder} with oven seared Pork ribs, leftover smoked Butt roast and pan seared round steak.

Speaking of comfort food. That's what I planned to make on Sunday but made it Monday instead.

Chicken Pot Pie

This has to be the best chicken pot pie recipe I ever tasted. Really tasty. It's also non-dairy, though I added some to make it creamier but it was good without if someone can't have dairy.

It called for leeks instead of onion, white wine and fresh thyme and these three ingredients definitely made the difference in flavor. Instead of a bland taste most of them have. Instead of carrots it called for diced butternut squash, and then the usual chicken, peas and mushrooms. I went half-and-half using butternut squash with carrots, because I only had part of a small squash left.

I bought the dough raw for the crust though, so couldn't have any. Just wanted to save time. Just had to roll it out, put on top, crimp edges and bake. It's a Martha Stewart recipe calling for a brown butter crust which would be time consuming. I was looking for a good filling only.

Here's the pics. The last one I shot too late, as it was almost gone and obviously wasn't my serving. I had no crust—just filling.

Tonight is fried tilapia fillets in Andys Red breading
Baked homemade mac n cheese with a 3 cheese blend
Sliced onion
Sweet tea
Sriracha will be used liberally

Tomorrow is comfort food sunday, massive 4 pound chuck roast with potatoes, baby carrots and onions in a beef broth... this big babys gonna feed me several work lunches and dinners

Smoking 2 butt roasts on 2 weber kettles. Brining now Ice cube onions if I remember.

I have a 1 3/4" Porterhouse I am going to smoke/ sear for the break before the late afternoon games on red zone.

I have some New Belgium Tripple's to suck on. Hopefully 12 was enough.

Pan seared bone in thighs. Seasoned with salt, pepper, garlic powder. Seared in pan till skin was crispy and browned on bottom. Then placed in oven at 400 for 15mins. Naan and romaine salad.

You should try a rutabaga in your pot roast. Cut it up like your potatoes. Tastes like a cross between a carrot and cauliflower.
