Posting this in the dinner thread since only Billay frequents the fitness thread anymore.

I love eating egg and chicken salad. Great source of protein with little to no carbs. However, how can I get the same creamy texture without using calorie dense mayo? Am I just limited to light mayo?

Well I'll be dammed. I have heard people using Greek Yogurt in things, and while I like it as yogurt, figured it would give something like egg salad a bit of bitterness to it. I substituted Greek yogurt for half of my normal mayo amount. I could not tell the difference. Next time I'll try just yogurt and see how it tastes.

Don't often switch it for mayo, but I always have plain greek yogurt around to substitute for sour cream, like on potatoes or in cornbread, or for milk, if I want richer mac'n'cheez. It would probably be good in Waldorf-style salad as well.

Wife wanted the salmon again. Spritzed with a bit of orange at the end. Roasted spuds.



This method is possibly my new go-to for salmon. Short brine and then start skin-side down in a cold pan. Really excellent.

If anyone's interested, I can expound on the method.

I have to get more potassium, so lots of spuds and bananas lately. My levels are low, and my dialysis washes it out every night as it is. :-/
