The whole thing spent about 8 minutes in a 400-degree oven. I like crispy outside, soft inside.

I'm sorry I've offended all you white folk.
Most people don't know how much variety there is in real Italian cuisine. It's not all pasta, tomatoes and cheese. There's lots of fish, and other meats and even veggies. In fact, iirc, there's an Italian saying that "A day without greens is a day without sunshine." (Buzz take note on the latter.)

The Mediterranean diet is one of the most varied of all cuisines. Don't forget, the French stole their cooks from Italy.

I didn't say that. Have I ever said that about your food? No, I have complimented it.

It is true that I am not well versed in Italian maybe. And that's very true about a Mediterranean diet and maybe I'm just stereotyping Italian to the bastardized American version I am used to.

We ate at a local Italian restaurant last Christmas Eve. Locally owned and operated by an Italian family for close to 30 years if I remember correctly. I will say many of the dishes on the menu I didn't know much about so I went with my standby of Penne Bolognese which I do enjoy. Here's the menu.
