We've had a kitchenaid and a bunch of attachments that have been sitting in their boxes new for several years. I probably need to use that thing lol

I left the fat from the roast. Which I'd guess was between 75 and 85% lean. Burgers shouldn't be made at less than 85%. 80% is better.

Yeah essentially you made ground chuck. Probably with better grade meat than you could buy ground chuck at the store. Most hamburger has the shit leftover meat in there. Make a burger out of sirloin sometime. That is amazeballs.

Do you have a press or did you patty it by hand?

i can't afford the kitchen aid, would love one though. i have to make my own pork breakfast sausage since its not sold down under. i use the food processor even though its not 'ground' properly. there is something to be said about treating your own meats :-)

went to the butcher and asked what they did with the point end of the brisket since its normally not attached to the flat. he says its worthless meat you cant do anything with it, so we grind it and add to the beef mince.:-)

I'm seriously debating buying a couple more briskets and grinding the flat and just making a shitload if burnt ends.

I've tried making sausage before and never had anything I thought was really good. This is the best sausage I've made. A little sage-y for my taste, but definitely good.

Single grind on the wide hole plate was perfect texture.
