We had a hamburger potato casserole thing one night last week. It was simple and really good.

Put a chili rubbed whole chicken on the smoker earlier today for a white chicken chili. I plan to shred the chicken and thawed out some Hatch chiles I've been hoarding to toss in with some cannellini beans; all built atop a mirepoix.

This sounds like a winner. I make a generic white chicken chili on the regular, but this is next level shit. Always do avocado and cilantro and a little hot sauce for garnish.

Speaking of roasts. Made a pork loin roast dinner on Sunday. Cooled down nicely by dinner time to eat outdoors by the pool too.

Pork loin rubbed in rosemary, thyme, garlic and olive oil. Made a past of it and stuck it in slats. Roasted acorn squash rubbed with applesauce, cinnamon, nutmeg with chopped apples. Mashed potatoes with a wine sauce; green beans, mushrooms and roasted small white onions.
