I'll second this, reverse sear is the way to go. When you sear first you heat the outside of the meat to well past done, it stays hotter and will have more of a gradient towards the middle.

I made a bbq glaze out of some homemade elderberry jam I made last summer.
Grilled center cut pork chop with said glaze
Collard greens
Roasted Brussels sprouts in soy/worchestershite drizzle
Roasted Parmesan baby taters

I don't worry bout how many greens I guess. I love sprouts and I love collard greens, so I made them. Anyhow, it was pretty healthy and very good

In the KC office this week and just spent my lunch per diem on a variety of rubs and bbq sauces to mule back to Chicago. Getting my sauce game back to respectable.

Collards and brussels sprouts are cruciferous vegetables. The color isn't how they get classified.

Looks delicious! Greens are great for ya'. Unfortunately, I've never been able to tolerate collards. I tried tho.' I'd eat everything else on that plate tho'!

I got KFC tonight. It's what the wife wanted. 3 chicken littles for the kid. an 8 pack of chicken with no sides, and 20 hot wings . 40 fuckin dollars!

To add the 2 large sides with 4 biscuits another $9. screw that.

Yeah, KFC and any of the other chicken chains are straight up rape in a bucket.

I'll buy a bucket from Hyvee or Price Chopper if I'm really fiending and it's usually only $16 or so for an 8 piece with a couple of sides. I guess that's not terrible but still sucks.
