I was finally able to try a Portillos beef, ironically though it was in Arizona at a Cubs spring training game, but it was damn good. I prefer Al's the best, but Jay's is closer to me and a couple minutes in delivery time can be the difference between a perfectly dipped sandwich and a sopping, disintegrating mess.

One of these days I'm going to get motivated enough to try and replicate that at home

I know I can make a rich broth and tender roast, but if I had to guess... getting the giardiniera right will be the real trick

A quality Italian or French roll is important as well. It can't be too tough but needs to be sturdy enough to support the juice. A shitty roll can really fuck you. Any top/bottom round or tip roast works well. I simply buy store/deli hot giardiniera because I put it on a ton of other stuff.

Somebody talk to me about lobster rolls. Worth it? Or is it a waste of lobster meat? My IRL friends seem to be split on the verdict.

They're good, but personally I'd rather just have the lobster. Plain lobster with clarified butter is tough to beat.

I just put a few pounds of wings down on the Pit Barrel for the Chiefs game. Will smoke for 45 minutes or so, sauce, then another 30ish.

I did a huge stock pot of Beef Stew with a couple loaves of homeade bread for the game. Also a good way to welcome the cold weather :-)

I just ate two of these along with a couple of Heinekens. Now I feel stuffed! First time I've eaten at BK in over 3 or 4 years.

Well, we went ahead and went for it. Bailed on the Chiefs game after Tampa scored the TD, and went to the store to get what little ingrediemts we needed.

The wife made them, but we didnt have quite enough lobster, so we had to spread the meat a little thin. Still pretty dog gone good.

Simple, too. The mixture was just finely chopped celery, parsley, mayo, lemon juice, and salt & pepper.

Toasted the rolls, and brushed them with melted butter.

The only problem was the lack of lobster meat. Ill fix that next time.

Made some chile verde for work and dinner. Great on cold days, I made sure to add a couple more serrano peppers.
