I think Mrs. FMB! is making enchilada lasagna tonight. It's my dish, but it's one of her favorites, and she wants to learn how to make it.

Sounds good. My boy loves enchiladas. Bad thing is most of the canned sauces suck. I did find a fire roasted enchilada sauce that was superb, they discontinued it.

I'm no connoisseur, but the one I use is from Ree Drummond. Get 3 small cans of red sauce (28-30 oz. is what you're looking for); make a roux with 2 Tbsp. of oil and flour, cook until blonde. Whisk in 2 c. good chicken broth, then add the canned sauce. Season with salt and pepper. I like it. Very tasty.
