I can't argue that, I wish ours was, I highly recommend the 8qt.

And the yogurt is soooooo much better. It takes a while, and you'll end up buying things like mega coffer filter to put in the colander to separate the whey, but being able to make your own yogurt, the way YOU like it, has my family eating it for breakfast more mornings than not. Oh, buying the fruit to go in the yogurt ain't cheap, but eating healthy has never been a poor man's game.

I've barely scratched the surface of instant pot usage. Seems like they have a cult following of people that use it for everything. That said, there are some awesome keto sites for instant pot with some good recipes...look up crack chicken (super trashy but legit good). We use ours mostly for roasts and hard/soft boiled eggs but I just discovered how to use it as a steamer so plan to start doing steamed veg and more fish. Also plan to use it to make homemade broths.
Same, plus fish. Didn't think the air fryer would get used much, so went with Instant Pot without that addition.

All of the "ready in 5 minutes!" recipes are kind of dumb, in that it takes several minutes to pressurize, then generally at least a few minutes to depressurize... but, still significantly faster, especially from frozen, and the quality/tenderness is far superior.

how does/what does the sous vide work. my stand alone shot craps so I'm looking.

You just put water in the pot and when it gets to the temp you've set it beeps. You put the vac-packed meat in, cover it with the glass top, and it beep when the time is up. We've started either using hot water or using the saute setting to get the water to temp more quickly.

The water doesn't circulate (if that's the question).

Eating at an Italian restaurant in Old Town Scottsdale, Pasta Brioni.

Doing Emma's Dumplings in Vodka Sauce and 3 different Bruschettas as appetizers then doing Veal Palloti with shitake mushrooms, artichokes, sun dried tomatoes and asparagus in a light white wine sauce with linguini garlic and olive oil.

Drinking some Sauvignon Blanc.

EDIT: What a meal! The dumplings might be one of the greatest appetizers I ever ate. Light little pillows of delicious.

Toying around with a smoked pasta dish and came up with Fusilli ala KC™

I smoked the meatballs separately, then placed the cooked pasta and gravy in a foil pan topped with mozz pearls and set on the smoker for 30. Similar to a smoked mac n cheese. Just enough smoke to give it a depth of flavor without overpowering it. Happy with how it turned out, will make again.

Cooked two things in the Instapot today. We did get the 8qt with the air fryer lid as well.

Frozen chicken breast dumped in for teriyaki chicken. I can't believe how awesome the texture of the chicken was and this is going to be amazing for me to meal prep during the week.

At night I cooked 8 wings on the pressure cooker setting and followed that with 20 minutes with the air fryer. Well I'll be damned, they were juicy yet crispier than any wings I've made using the oven before.

I think we have a winner. And thank you for talking me into the bigger size.
