I had this shitshow rodeo all fucking day, so I made this.



Yesterday in anticipation, I smoked a chuck roast (took it to 180) and subbed it for one of the pounds of hamburger in the wife's recipe. Also roasted a couple pablanos.

Both are winners. I think more smoked chuck and less hamburger is on the docket next time. Every bite with the smoked chuck was fucking amazing.

I haven't roasted pablanos in awhile, because I'm a moron. They're good on fucking everything. I think next time, I'm roasting a couple seeded jalapenos and a red bell pepper. I think the roasted peppers add a lot of texture and depth to the chili.

Nothing close compared to what yall in the midwest are getting but its the coldest week of the year here in PHX. I had to breakout some long pants and socks

Anyway, smoked a whole chicken and made stock from the carcass for chicken tortilla soup. Smoky, spicy comfort

I like cornbread with ham and beans and saltines are my go to with chili. If those are townhouse butter crackers on fish's plate that's a good choice too. I can't tell if they are oval or round. Ritz suck anymore.

Looks great! I need to give that a try on the kamado at some point. Costco makes their rotisserie chickens so cheap it's hard to get inspired to do it myself.

Yep I use a lot of rotisserie chickens. I'll only smoke one if I want that added smokiness in something, like that soup or chicken enchiladas, bbq, etc.

Heh. The fucking rotisserie chickens at my local grocery store are now fucking $8 and they're almost always overcooked dry ass.

Honestly get yourself a vacuum sealer, smoke and shred 4-5 birds, portion and seal them, and they're a good alternative. I did that with a few chickens (shredded to store), some chicken breast (sliced to store), and sirloin steaks (sliced to store) back when things were cheap and used them a lot. I probably need to get back to running baches of those. Worked really good for quick stuff (or in my case tractor meals because I was all the fucking way done with sandwiches a few years back)

Green beans. They were actually slightly undercooked. Still good, but a little crunchier than what I was going for, lol. That was just me forgetting how long they'd been in the pan. Seasoned with just salt/pepper/lemon pepper powder and EVOO.
