To be honest, I got home later from work than usual, I didn't feel like cooking the chicken parm I'd planned to make, I wasn't particularly hungry by needed some decent protein, and two fried eggs on buttered toast is pretty great. I lived on those things in college. I could buy a couple dozen eggs and a loaf of bread for like $4 and eat for a week.

Wife made Chicken Curry last night, and packed it for my lunch today.



I don't eat curry often, so I'm not sure how this dish compares to traditional versions, but it was really tasty.

She said the sauce was curry powder, coconut milk, oil, and a little tomato sauce.

It had carrots, green beans, potatoes, tomatoes, and chicken in it.

Very good.

Not spicy. My wife doesn't do spicy. She swear up and down that she can, but then I catch her with the runny nose after using something as take as the Whataburger spicy ketchup.

I love Chicken Curry made with coconut milk. Looks good really good. Looks like red curry but maybe it's just the tomato sauce.
