I’m thinking if you use enough sesame oil to cook a good size steak with, all you’re gonna taste is sesame oil... it’s very powerful stuff

Use canola oil because it's versatile and affordable. Open all of the windows you can and run your attic fan if you have one and suck it up if you're wanting a good sear on those suckers indoors. There's pretty much no way around it if you're getting your cast iron up to blazing temps.

If I do a steak indoors I run my oven at 500 with the cast iron in it for about half an hour and then crank the burner on high before putting the steak in. Smoke city.

NO. Don't use sesame oil for pan searing. Sesame oil has a very low smoke point; significantly lower than olive oil. Plus it has a very strong flavor which will overpower any other spices/seasonings that you try to use if you use more than a small amount of sesame oil.

But the main thing is sesame oil will smoke a lot more than EVOO.
