I cooked for the first time in 7 years. Wagyu compliments of Snake River Farms. It was delicious. Not sure what the point in owning a grill is if I can just use a cast iron pan and an over. Came out just like I expect from a steakhouse although it was a little too medium to medium well than my liking.

You’re peeing sitting down until you learn how to cook wagyu without overcooking it.

I think I have it all figured out next time. The recipe I followed said to put it in the oven for 10-20 minutes after you sear it. I only did 11 minutes, and thank god only that much. I like my steak medium rare.

Try reverse sear. I think it’s safer for over-cooking like that since the oven heat when it’s out of your eyesight is when it’s cold from the fridge.

Don’t knock peeing sitting down until you consistently do it.

You’ll never go back.

And for the record, only at home. I avoid sitting on any public toilet as much as I can.

I’ve been on dialysis for four years. I pretty much don’t pee.

Yup. One of the last things I’d wish on anyone, dialysis.

Cool. I spent the weekend in Sydney. It rained the whole time until this morning, but was cool anyway. Back in Canberra now.

I don't normally eat breakfast, but when I do, it's green chili pork tamales with a running egg and pickled red onions.

Simple but good.
Filet Mignon
Baked Potato
Steamed organic broccoli
Garden salad
Needed a big hit of red meat protein. I was fading.
