You can buy their enchilada sauce by the gallon. It's like $20 a gallon.

The enchiladas are good there. I prefer the cheese enchiladas, but the Texas Stacked is pretty damn good.

Glad they opened back up and we have a Taco Tico in town.

As the neighbor put it, he was as stuffed as a tick on a tampon. I sent some home with my son but I still have a good bit leftover, another dinner or two. I'm about tired of BBQ, this is the 3rd week in a row.

1 can Cento tomatoes
1/2 white onion sliced
4 cloves garlic
1 tbsp oregano
1 tbsp bread dipping seasoning
1 pkg Capellini pasta

this evenings meal is curried sausages, and mashed potato's :-)

(if it turns out shit, i won't post anything further, but if it turns out to be the bomb, ill give you details :-) )

for never having done a curry with sausages from scratch and not a glass jar, this was damned good.

12 sausages grilled/cut into chunks

2.5 TBS curry spice
1.5 TBS garlic
1.5 TBS grated ginger
2 TBS brown sugar
2 TBS butter
3 TBS applesauce
2 TBS tomato paste
2 TBS worcestershire sauce
2 tsp salt
2 tsp white pepper
1 cup heavy cream
1 cup coconut milk
1 brown onion
3 large spring onions, greens and whites


mash was as simple as butter, diced ham, salt/pepper, buttermilk/milk

afterwards the wife told me to put it on the list of meals from here on out. :-)

We ate a Pie Five near the hockey arena before my son's game, and it was very good. I have the Greek salad, the wife, son, and son's best friend had pizzas, and it's very-much a do again.

Why is your son playing hockey in June? Is your last name Holtby or Fleury?

For us it's a year-round deal. We'll take time off for vacations and scouting-related trips, but we love hockey and there's NOTHING better than walking into a a 60-degree building in June after YEARS of coaching 3rd base (for the older son's) baseball team through 95+ degree tournaments. Inside, around a sheet of ice, between scouting event and dive vacations, is AWESOME!! And goalies get called A LOT for everybody else's practices. It's something you just enjoy...

:-). I enjoyed those days too. When my boys were playing it could be a bit of a pain in the ass, (6AM practices in the dead of winter), but it was all worth it for the men that they've become. Another plus of being a hockey dad is getting to eat at new and unusual places. Enjoy the ride. I hope he eclipses Holtby and Fleury.

Amen brother, ice time is had when it's available. And (for me) those early morning practices never allowed the ibuprofen to full get working. And yes, while hockey is a humbling sport (to say the least), it does produce some great people.
