I'll second this, reverse sear is the way to go. When you sear first you heat the outside of the meat to well past done, it stays hotter and will have more of a gradient towards the middle. [Reply]

I don't worry bout how many greens I guess. I love sprouts and I love collard greens, so I made them. Anyhow, it was pretty healthy and very good [Reply]

I'll buy a bucket from Hyvee or Price Chopper if I'm really fiending and it's usually only $16 or so for an 8 piece with a couple of sides. I guess that's not terrible but still sucks. [Reply]
