The cheap stuff is usually corn syrup mostly, so a big difference is pretty analogous to the difference between modern Coca Cola and Kosher cane sugar Coca Cola.

Mouthfeel and complexity to the flavor are the big differences. Cheap stuff is corn syrup with chemical flavorants. Real stuff is just tree sap with the excess water slowly boiled off.

EDIT: Oh, and if you consume too much of the real stuff, young men are prone to getting 'all antsy in the pantsy.'

So what's the average number of days you collect sap and when do you know to stop?

When I used to do tree work a long time ago depending on the weather and the time of the season when we pruned maples the sap would leak out and freeze when it hit the cold air. Sapsicle stalagmites would be hanging off the fresh cuts. Tasted pretty good to me at the time

Depends on weather 4-6 weeks , you stop when it stops , it does get watery near the end and the ratio may change, as far as dark or light it varies .

How does licking a tree compare to hooker clam?

Oh I don’t know. There was no licking. You broke the thing off from the tree

Idk how they formulate all this stuff but I'm sure with it hitting the retirement home hard in Wyandotte and the person dying from it at the retirement place in Harrisonville the numbers for the metro area are going to rise.

What I find so strange is that its confidence level the other day had Missouri projected for like 500 some deaths with a max of 1200. Now it's back to saying upwards of 2600 at max.
